They're independent sellers I think you'll find. They can charge whatever they like and pay a fee for the pitch.

Nope - I'm pretty sure the vans outside are also owned by Compass, the same catering company who have the contract for the inside catering.

Competition is what is needed. Competition = same prices= same amount food sold. Competition = those that have the vans working together to set prices.
