I'd go for Young. His only real competition for the left wing is Downing, who isn't expected to be back 'til December. But then the same can be said for Valencia, whose only real competition for a spot on the wing are Nani, Park and Giggs.
Plus bear in mind the style of play. Young is a good crosser of the ball and (IIRC) takes many free-kicks/corners. With players like Heskey and Carew up top, they'll be looking to play it to his head as much as possible. Valencia has to play to Berbatov and Rooney, who aren't the best with their head.
All in all, my pick would be Young

I don't think it would be wise saying that Berbatov will get more assists than Young.
